Seitan Schnitzel with Fries

For the cutlets:

For the breading:

Preparation
1. For the seitan schnitzel, mix the Vantastic SeitanFix with the dry ingredients. In another bowl, mix the liquid ingredients with water and then stir both mixtures into a dough and knead well. Divide the mixture into four portions and roll out each portion into cutlet slices about 5 millimeters thick.
2. Steam the cutlets in a pan with a steamer attachment at approx. 100 degrees for 20 minutes until al dente and then leave to cool slightly.
3. For the breading, mix the egg substitute with water and vegan cream alternative. Fill one plate with flour, a second with the egg alternative mixture and a third with the breadcrumbs.
4. Moisten the cutlets a little and season with salt, first turn them in the flour plate, tap off the flour a little, dip them in the vegan egg mixture and finally turn them in the breadcrumbs.
5. Heat the vegetable oil in a higher pan and fry the escalopes (one after the other if necessary) for 7-8 minutes. Turn several times in between, then pat dry on kitchen paper after removing. Alternatively, you can also prepare your seitan schnitzels in an airfryer.
6. Serve the schnitzel with chips, potatoes and salad as desired
